Coconut salsa !
Mix 1 deseeded, diced cucumber, 1 diced red onion, a large handful of fresh coriander, the juice of 1 lime, 2 deseeded, finely chopped red chilies, a handful of ELAN Organic Coconut Smiles and a good glug of olive oil. Season, then use to fill tacos and serve with grilled fish.
GERMAN SWEET CHOCOLATE CAKE
Ingredients
1 (4 oz.) pkg. Baker's German sweet chocolate
1/2 c. boiling water
1 c. butter
2 c. sugar
4 egg yolks
1 tsp. vanilla
2 1/2 c. cake flour
1 tsp. baking soda
1/2 tsp. salt
1 c. buttermilk
4 egg whites, stiffly beaten
FROSTING:
3 egg yolks
1 c. evaporated milk
1 c. sugar
1 tbsp. butter
1 1/2 c. ELAN Organic Coconut Smiles
1 c. chopped pecans
1 tsp. vanilla
- Melt chocolate in boiling water; cool. Cream butter and sugar until fluffy. Add yolks, beating well after each. Blend in vanilla and chocolate. Sift flour with soda and salt. Add dry mixture alternately with buttermilk, mixing well after each addition. Fold in beaten egg whites. Pour into 3 prepared cake pans. Bake at 350 degrees for 35-40 minutes. Beat eggs, milk, sugar, and butter. Cook over medium heat for about 12 minutes, stirring until mixture thickens. Remove from heat; add coconut, pecans, and vanilla. Beat until cool and of spreading consistency. Frost between layers, top, and sides.
Being Dominican Canadian growing up with a coconut tree in my backyard I can tell you these coconuts are amazing! This isn't a sugary snack coconuts are not super sweet natural coconuts are amazing just like these even when you bite into it and the natural coconut oils smooth out in your mouth I was shocked at how great these snacks are.they're my top favorite right now my go-to the price is amazing they are crunchy and creamy at the same time it's as if I took it from the tree cut it into pieces put in my oven and they came out right away like that it's amazing,if you're not used to eating coconut naturally you might not value it's taste but I'm telling you these are amazing.
