What I do is mix a bunch of this up in full fat yogurt and then marinate chicken in it for an hour or so, then I put the chicken on the grill or in my little convection oven. So good! The other thing I’ve done is just throw some chicken and vegetables in the Instapot and then put a bunch of this in. When it’s done, I’ll add a can of coconut milk to give it some richness. Honestly, I’m not sure if I’m doing any of this properly and I really don’t know what I’m doing, but hubby likes it, so I will keep trying different things.
One thing to note… When this is cooking it will smell up your entire house! Your neighbors will probably know that you are cooking with it. It is not a bad smell, but if you are not used to having a strong food smell in your house, it’s best to cook it outside. I have one of those round convection ovens that cook from the top and I can plug it in with an extension cord and put it on the balcony. I also have a George Foreman grill that is on the balcony. I even put the Instapot on the balcony when I’m cooking this! I won’t cook with it inside.
But this is great stuff, really gets that curry flavor that you want into your meal!
