Yes and yes.
Zoom is available for Amazon fire, but you will not be able to install it on the children’s profile, only the admin profile.
You can browse the internet as well in the admin profile, but on the children’s profile you must approve all websites the child can view from the admin profile.

Not within the kids + portal so it would be under your adult account outside of the are you have parental controls.

You could but if it requires an app confirm it is available at the Amazon App Store as this device doesn’t support the google play store without a work around.

Zoom is available to download and the parent profile and then add it to the child profile. Other apps that are google based you Must download an APK file of google play store. You’ll have to install the apps in the parent profile and then add them to the kid’s profile. For the best experience and for it to be easier you can just let them use the parent profile. It’s a long process but Yes you can. It can take about 5 minutes to over and hour. You can find tutorials on YouTube if your not that tech savvy.
