Was recommended by a chef on Patreon to buy this to make Vegan cheese. I haven't made the cheeses yet as I'm still missing other ingredients BUT, I did blend this in with my VWG (Vital wheat gluten) and my chikon was exceptionally good, especially frying in a skillet-gave it a nice crispy 'skin' like on real chicken.
I'm planning to try this for my cheesecakes and my other baking needs.
Highly recommend this flour.
