I had a very good recipe. I let the chicken sit for 20 minutes before preparing it on the counter.
I oiled the chicken with organic olive oil. I then generously kneaded the mixture into the chicken.
Smoked it at 265F for one hour, then cranked it up to 365F for two hours.
Let it sit for 15 minutes then my wife and I enjoyed the best tasting chicken we've ever eaten.
No short cuts!
